Veggie Culture Starter is ideal for pregnant women, ensuring a healthy birth canal for her newborn child who will rely on her to provide healthy bacteria. Children with autism and ADD benefit from the culture as well. Cultured vegetables help take away cravings for sweets, soft drinks, bread, pasta, dairy, fruit and other expansive foods not allowed on the diet.
Research suggests that Lactobacillus plantarum has an ability to reverse gut disbyosis, like IBS, Crohn's Disease and Colitis.
Cultured Vegetable Starter contains the following beneficial bacteria:
- Lactobacillus plantarum
- Lactococcus lactis ssp. lactis
- Lactococcus lactis ssp. cremoris
- Lactococcus lactis ssp. lactis biovar. diacetylactis
- Leuconostoc mesenteroides ssp. cremoris
- Lactobacillus kefyr
Each box contains 6 packets which can be used to make cultured vegetables, cultured whipped butter, and creme fraiche.
Suggested Use
Add one foil starter packet to one pint of pure, organic cream to make delicious sour cream. Whip the cream to make the best-tasting whipped butter you've ever tasted. You can flavor the butter with garlic, herbs, sea salt or even stevia.
While complete instructions and special tips are included with the packaging, ensure that the mixing bowl, electric beater, and sour cream are chilled before you begin making your butter.
Shelf life is 8 months from the manufactured date, or longer when stored in a freezer. Carrier is Dextrose.

We have a local company that makes wonderful raw cultured vegis. They however, use the oldworld style of salt and the natural microorganisms on the cabbage. I have a hard time digesting them and they did not repopulate my intestines well. Then I started making my own cultured vegis with the culture starter, in additon to drinking lots of coconut and water kefir I am now able to digest raw vegitables, I have never, as far back as I can remember been able to digest raw vegis without pain, gas and constipation. This starter is wonderful for use in making your own raw cultured veggies; without it, you are not always sure your veggies are going to turn out well. It's a pretty small price to pay for insurance! I bought this product years ago to get rid of yeast problems. It worked; then I found another probiotic that seemed to work also: Fivelac, Good, but the yeast never went away completely. I realized it's a lifestyle and probably too much wine. I am overall healthy but have a low thyroid due to Hashimoto's and food sensitivities which I realize are both due to leaky gut syndrome. I realize now I am 45 and can't take my health for granted any longer. I must heal my gut if I am to live a quality life. This veggie culture is great; my only recommendation is to add celtic sea salt (the stuff I ordered on this site is awesome!) sea salt prevents the veggies from getting mushy - instead of mush you will have crispy sauerkraut. To me, quite honestly, I wouldn't call it yummy cause It is very sour, but I eat 1/2 cup religiously twice a day and take fermented cod liver oil and try to drink bone broth and eat primal. My transition/ adherence to this program is nowhere near 100% but I figure baby steps are better than nothing and hopefully will take me one step closer to health in my old age as opposed to disease. It's all about quality, not quantity.

However, the outcome is tasty, good-for-you cultured vegetables that we have with every meal. However, the delivery of our product took over 2 weeks. Knowing that my credit card had been charged, I finally called to hear that my order didn't go through. There was a "glitch" in the ordering process. It would have been nice to get a discount or something for their mishap.

Overall great product - I had to get used to the sour taste of cultured veggies but now I really like them, especially eaten with salmon.
My only complaint is that the instructions could be a little clearer: they read step-by-step how to make cultured veggies, but without even mentioning the culture starter. Then on the NEXT PAGE you read you have to first dissolve the starter in warm water, add sugar and let it sit for 20+ min! This should be STEP ONE, not shown separately on another page.
But other than that, great product!

I found the instructions, both on paper and watching the video, to lack one important detail, does the "brine" need to cover the veggies? My first batch I lost half of the product due to turning brown and molding. My husband is a professional chef and he was mortified by the lack of info, esp. on botulism, the high temp of fermenting (70-72*) and the recommendation to use beets (especially prone to botulism). I will keep fermenting, but am reading more complete info and will use other more natural products once I use up this product.

My husband and I have never made cultured veggies before, but he has done home-brewing and I've worked in a lab, so we figured we could handle trying to make it. But from our experience we did not mess around with contamination, so we bought this starter and we bought one of those German Kraut making water-seal clay pots off of Amazon. We have had two batches of perfect kraut off of one starter, and we would probably have enough to keep going with the first starter, except that I've taken to drinking the kraut juice straight up. I love that stuff. I've even frozen extra kraut juice for soup stock: obviously don't get the live benefits, but it is a good quick stock.

I love BED culture starter. I have tried other products and they do not compare to the cleanliness of BED's product. Fermented veggies turn out amazing as well as saurkruat and KimChi. It is a bit pricey, but it is also worth it!

I had never fermented vegetables (or anything else before) and thought it would be to time consuming and difficult. The information that Body Ecology provided with the starter was very straight forward and quite easy to follow. I also watched the video on fermenting vegetables that they have posted on their site. The product was easy to use and I am excited to try many combinations of vegetables in the future! I highly recommend trying it.

I made cultured veggies in 3 ways: with salt only (this is the traditional way very typical of European countries), with salt and whey, and with culture starter. I have not noticed any difference in the time until veggies became sour, and have not found any advantage whatsoever of using this very expensive product. My best cultured veggies were those made with salt and whey. I can buy a half gallon of whey from a raw milk farm with $3 and I can make countless culture veggies for peanuts.
I also wanted to mention that I tried to culture coconut water (organic from a can) and it did not work. After an entire week of waiting to become sour, it was still sweet. This culture starter was able to culture fresh coconut water in about 4 days, but it was infective at culturing coconut water from a can. On the other hand if I used kefir grains (water kefir grains), they could culture anything, including coconut water from a can. So my conclusion is that this started is not potent enough.

I followed directions but for some reason the vegetables came out "slippery" and I tossed them. I wish the BE site had a question and answer/troubleshoot link as I could find virtually no assistance when problems are encountered making fermented vegetables. I phoned and spoke with a BE assistant and she said she only tasted them once and didn't know where or how I could get any feedback. Kinda disappointing. I will try again, however and hopefully all will turn out well. Am sure I did something with last batch to cause the vegs to become icky.

I LOOOVE this product, and admit I have become addicted to it. I love to use really colorful vegetable, like, last weeks batch had red pepper, apple, cucumbers, kale, carrots, garlic and whole coriander seeds. It was sublime. I love it so much that I like to make it sort of "wet" so that I have extra liquid to eat with a spoon like soup. It makes me feel really calm and mellow, and my hair is shinier. I thinks its important to use a High Speed Blender when you make the marinade part,a and I make sure I use a sweetish component like an apple or pear. BUT beware: there is a definite TANG in the air when you are fermenting. I love it now, but at first I was like, why does my kitchen smell like a men's locker room where someone left an onion sandwich to ripen? NOT good if you are 1) selling your house, 2) having your book club over, 3) having your mother in law over for tea, or 4) having a date for dinner. Everyone will wonder. But hey, I like durian, and I like this. If I were an ancient Egyptian pharaoh, I'd want to be buried with crocks of fermenting vegetable to enjoy in the after life.

got a few tips as to other vegetables you could use. They turned out great!! I love the fresh taste!! Anytime I crave something sweet, I have a tablespoon or two!! Zaps the craving--plus I know the veggies are much better for me.

I just read the Body Ecology diet and was eager to add more fermented veggies to my diet. My husband has a thyroid condition that does better on gluten free too and I like that fermented foods help heal the gut to help with this.
I've now made my second bath of fermented veggies and we eat them every night with dinner. What a difference in digestion! The product is very easy to use too and makes it easy to keep these delicious veggies on hand.

This was my first time to ferment. It can get messy, but it is very easy. I was very pleased with how my fermentation came out. I am eating on my second pint. As I am eating the veggies I am thinking of how I might change it in a little different way, etc. I haven't been eating long enough to say how this is going to affect my body. I have digestive issues so I am excited to how the veggies may help.

I really like using the Veggie Starter. I am new to fermented vegetables and started out making sauerkraut with just cabbage and salt but had misgivings that so much salt was required - not to mention waiting 2-4 weeks before the batch was ready to eat. I love the ease of using the starter and that the veggies are ready in 4-7 days! But the most important thing to me is all of the good bacteria in the starter that we wouldn't get otherwise... especially the plantarum.

I recently made my first batch of cultured vegetables. I added the starter as indicated, but was confused about the varying amounts of water to use. The instructions inside the package said 1/2 cup of water, but the recipe on the site says 1&1/2 cups of water. Also I do not own a food thermometer so I could not determine the 90 degree temp requirement.
I will have to purchase one. However! I am a former junk food junkie, and LOVE this diet. Eating this healthy is VERY empowering. I feel terrific! My veggies have turned out OK, and I assume they are loaded with healthy enzymes!

I really like this product, it's very versatile. I've made coconut kefir, sauerkraut and sour cream with it and it worked beautifully. The only problem I had with it (which could have been operator error) was when I tried to use it for a large batch (crock size) of the sauerkraut. The batch grew some mold and I had to throw it away. Other than that, the other things I've tried have come out great.

This culture starter is easy to use and very potent. I just fermented soaked almonds overnight to make a hummus and the results are delicious, low-cost, and fabulous. I am already excited to ferment my own sour cream here at home! Lovely product. On a side-note, most products in the health food stores call for salt in the fermentation process and Body Ecology's brand does not, it's a VERY potent and VERY good product. I recommend it heartily. This is a wonderful product! For the last couple of months, I have been making fermented veggies without a starter. This past weekend, I make 7 quarts, using the culture starter and Eco Bloom and they have definitely been more active! It is day 4 of fermentation and they are a beautiful golden color with lots of activity going on in the jars. I have purchased the cultured veggies before, from someone who makes them with the BED starter, and they are superior to ones made without the starter. Very easy to use! I highly recommend this product along with the Eco Bloom!

I tried to purchase this starter a couple of months ago, when I started the diet and you were out of stock. So I bought some starter I found at my local health food store. That culture called for the addition of salt to make it work. Even though I followed their instructions, the final result was cultured cabbage that was so salty, it was almost inedible. When I was finally able to order the Body Ecology starter it yielded a much better, salt free, end product that I enjoy making and eating. The directions are easy to follow and there are creative recipe ideas for going beyond your basic cabbage kraut.

I had wonderful success with this at first. But I kept the starter in my fridge too long, although well before the expiration date. I now see on the website that it says shelf life is 8 mos, or longer if kept in the freezer. Please add this vital information to the box. I couldn't figure out why my cultured veggies were spoiling so quickly and when they did, it felt like I had food poisoning!! Please correct this problem. Otherwise it is an excellent product. My digestive problems cleared up overnight with these cultured veggies. If you fix this problem, I will change my rating to 5 stars.
