Father’s Day Chili Cook-Off: 2 Healthy Chili Recipes Dad Will Love

Steak Chili – The King of all Chili

Dad can still enjoy his steak on Father’s Day. The key is to combine it with non-starchy vegetables and have it earlier in the day for the best digestion. This chili recipe includes tomatillos, a non-starchy member of the cactus family that combines healthfully with meat, and is easier on digestion than traditional tomato-based versions. Remember, if you eat right for your digestive system you are eating right for your overall health.

Ingredients

  • 1 lb organic grass-fed beef steak  (Dad’s favorite cut)
  • 3 chopped onions
  • 1 bulb chopped garlic
  • 3 chopped red peppers
  • Juice of 4 limes
  • 1 cup raw apple cider vinegar
  • 5 cups chopped tomatillos
  • Chili powder to taste
  • Cumin to taste
  • Cilantro to taste
  • Cayenne pepper to taste
  • Coconut oil for sautéing

Process

  1. Marinate your steak with ¼ cup raw apple cider vinegar, juice of 1 lime, cumin, 1 chopped onion and 1 garlic clove for an hour or more
  2. Sautee onions, garlic and peppers in large pot with coconut oil
  3. Chop steak and add to pot
  4. Add tomatillos, lime juice, herbs and spices to pot and simmer for 45 minutes
  5. Remove from heat and let cool, uncovered for 10 minutes. Add the rest of the apple cider vinegar and stir

Zesty Green Veggie Chili

If Dad prefers tangy and spicy, he will love this twist on vegetarian chili. The addition of cultured salsa makes this meal a bit easier to digest, plus adds an extra zip. You can purchase Rejuvenative Foods Brand cultured salsas at your local health food store.

Ingredients

  • 3 chopped red onions
  • 1 bulb chopped garlic
  • 3 chopped red peppers
  • Juice of 4 limes
  • 1 bag frozen organic corn or 2 cups fresh corn
  • 1 cup each of chopped green beans, zucchini and peas
  • Chili powder to taste
  • Cayenne pepper to taste
  • Cumin to taste
  • Onion powder to taste
  • Fresh green chili peppers to taste
  • Sea Salt to taste
  • 1 jar cultured salsa (home made or store-bought)
  • 1-2 cups chopped avocado
  • Coconut oil for sautéing

Process

  1. Sautee onions, garlic, red peppers and green chili peppers in coconut oil until soft
  2. Add green beans, zucchini, corn and sauté
  3. Add lime juice and seasonings and simmer with lid on for 20 minutes
  4. Add peas and simmer for 5 minutes
  5. Remove from heat and let stand for 5 minutes, uncovered.
  6. Add cultured salsa and chopped avocado to taste to each bowl before serving
