Quinoa or Basmati Rice Holiday Pudding
This quick, delicious, healthy recipe using Body Ecology’s all-natural no-calorie Lakanto sweetener is ideal for holiday meals and more!
Ingredients:
2 cups water
½ tsp sea salt
1 cup quinoa or white basmati rice
1 – 14 oz. can organic coconut milk
2 raw egg yolks only, beaten
3 Tbsp + 1 tsp Body Ecology Lakanto Natural Sweetener
1 tsp cinnamon
1/tsp nutmeg
½ cup Goji berries, soaked (optional)
½ cup shredded coconut (optional)
- To Cook Quinoa or Rice:
In a medium saucepan bring 2 cups water to boil, cover, reduce heat to low and cook 30 minutes until Quinoa (or rice) is tender. - To make dessert:
Combine coconut milk, Lakanto, egg yolks, cinnamon, nutmeg, and shredded coconut (if using)
Combine liquid ingredients with cooked quinoa (or rice) and goji berries. Mix well.
Fold into a butter baking dish or casserole. Bake at 350 degrees for 25 – 30 minutes. Serve warm with whipping cream if desired. But this dessert is yummy at room temperature or chilled as well.
Sugar-Free Whipping Cream
Ingredients:
1 cup raw cream
1 – 2 Tbsp Lakanto
Combine cream and Lakanto. (Taste cream/ Lakanto mixture to determine level of sweetness) Using electric mixer or hand help blender whip at highest speed until stiff peaks form (approximately 3 minutes) .
