  • 1 head green cabbage
  • Body Ecology Cookbook
The Body Ecology Living Cookbook features a long list of soup recipes — like Broccoli and Fresh Fennel, Seafood Donabe, Basil Veggie Stew, Curried Celery, and many more — that you can enjoy for breakfast, lunch, or dinner.

    1½ teaspoons whole mustard seed

  • ½ teaspoon whole celery seed
  • ¼ teaspoon dried rosemary
  • ½ large red bell pepper, diced
  • ½ large white onion, diced large
  • 1 pound ground turkey
  • ½ large zucchini, finely shredded
  • ½ large carrot, finely shredded
  • 1 clove garlic, minced or smashed
  • ½ serrano chili, minced
  • ½ bunch parsley, roughly chopped
  • 1½ teaspoon Celtic sea salt
  • 2 ounces melted coconut oil

1. Cut the cabbage stem flush with the head. Carefully peel off as many whole leaves as desired, cutting back the stem as needed.
2. Set a large stockpot of water to boil and put a colander in the sink.
3. Immerse 3 or 4 cabbage leaves for 1 to 2 minutes in boiling water until just flexible. Remove with tongs and place in the colander to cool and drain.
4. Toast rosemary, mustard, and celery seeds in a small dry skillet until fragrant. When mustard seeds just begin to pop, remove from heat. Cool for 5 minutes then roughly grind them. Place in a large mixing bowl.
5.Add turkey, zucchini, carrot, onion, bell peppers, onion, chili, garlic, parsley, celery and sea salt to the seed mixture. Pour in the coconut oil, and using your hands or a large spoon mix until ingredients are evenly distributed.
6.Put a large scoop of filling inside a cabbage leaf (natural curl up). Starting with the stem end roll up like a burrito, folding the sides in as you roll to seal.
7. Place rolls, seam down, on a tray or in a baking dish Cook immediately or refrigerate/freeze for later use.
8. Here are some suggested cooking methods:

• Steaming. Pour about 3 to 4 cups of your favorite broth or stock into a pot with a steaming basket. Add cabbage rolls in a single layer. Bring to a boil and allow the rolls to steam for 5 minutes. Turn with tongs and steam for 5 minutes, or until cooked through.
• Baking. Arrange cabbage rolls in a single layer in a baking dish. Add just enough broth (page 57) or gravy (page 111) to fill the space between the rolls. Cover and bake at 350 degrees for 35 to 40 minutes.
• Slow cooking. Fill slow cooker with cabbage rolls, seam side down. Add enough broth to fill half way. Cook for 8 hours on low.

9. Cabbage rolls should reach 165 degrees on an instant read thermometer before serving.
