Holiday Sage and Apple Stuffing (Vegetarian)

Stuffing

Sure to be a holiday favorite, this meatless stuffing uses almond flour to create a tasty alternative to the traditional bread stuffing.

  • 7 cups red onion, diced
  • 5 cups celery, diced
  • 2 1/2 cups Granny Smith apple, cored and diced
  • 1/2 cup dried Bing cherries
  • 4 cups almond meal (You can purchase or make your own by grinding soaked and dehydrated almonds with a high-speed blender.)
  • 4 – 6 leaves of sage, chopped
  • 1 sprig of fresh thyme, remove stem and chop leaves
  • 1 sprig fresh rosemary, remove stem and chop leaves
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 5 tablespoons ghee or coconut oil
  • 6 eggs, whisked
  1. Set oven to 350°.
  2. Grease a large baking dish with ghee or coconut oil.
  3. Add 4 tablespoons ghee or coconut oil to a saucepan and warm over low/med heat.
  4. Add onion and sauté over medium heat for 5 – 8 minutes, until onions are translucent.
  5. Add celery, apple, and herbs. Cook for an additional 5 minutes. Remove from heat.
  6. In a large bowl, combine almond flour and dried Bing cherries.
  7. Add the lightly beaten eggs and 1 tablespoon of melted ghee or coconut oil to the bowl. Mix well.
  8. Combine remaining ingredients and spread evenly into a baking dish.
  9. Cover and bake at 350° for 45 minutes to 1 hour.
