Quinoa Salad Recipe

Ingredients:

  • 2 cups uncooked quinoa (or millet)
  • 2/3 cup frozen peas
  • 2/3 cup frozen or fresh corn
  • 2/3 cup red bell peppers, finely diced
  • 1 bunch scallions or l red onion, finely chopped (optional)
  • 1 cup or more rosemary vinaigrette (see recipe)
  1. Cook grain until cooked but slightly resilient.
  2. Steam carrots, peas, and corn 4 – 6 minutes (should be
    cooked but still slightly firm).
  3. In a large bowl, combine all ingredients.
