Quinoa Salad Recipe
- 2 cups uncooked quinoa (or millet)
- 2/3 cup frozen peas
- 2/3 cup frozen or fresh corn
- 2/3 cup red bell peppers, finely diced
- 1 bunch scallions or l red onion, finely chopped (optional)
- 1 cup or more rosemary vinaigrette (see recipe)
- Cook grain until cooked but slightly resilient.
- Steam carrots, peas, and corn 4 – 6 minutes (should be
cooked but still slightly firm).
- In a large bowl, combine all ingredients.
