Pesto Recipe
Ingredients:
- 3 – 4 cups fresh basil
- 3/4 cup organic, unrefined flax or pumpkin seed oil*
- 1 tsp. sea salt
- Rind of 1 lemon
- 3 Tbsp. lemon juice (approximately 1 juicy lemon)
- 3 – 4 cloves garlic
- 1/2 cup flat leaf parsley
- 1 Tbsp. lecithin

- In a blender, combine ingredients.
Blend until thoroughly puréed.
Serve over noodles, grains, red potatoes, a salad or a
platter of vegetables.
*At the time when you are able to introduce olive oil into
your diet, it can be used in this recipe in place of the unrefined
oil.
