How do I know if my coconut water has spoiled?

A shucked coconut should be white in color. If the meat or water has turned pink, purple, or grey, you should discard the coconut as it may be contaminated. Although you may find varying opinions as to whether off-color coconuts are always bad, and there are different reasons why they may not be white, it is best to be safe and discard any coconuts with non-white meat or discolored water. If you purchase a packaged raw coconut water, this is an exception as there are some brands that may turn pink for other reasons that do not mean that the water is spoiled. Please refer to the company you purchased the water from in this case to determine whether or not the water is fresh.
